Depends, they have tons of applications. It's like asking what are numbers for
but for example, they serve to solve systems of equations, to treat data in tables (2-variables), they can represent transformations in geometry (rotations, dilations, ...), etc.
And as for using, you can add/substract them (if they are the same size i.e. same number of rows&columns), multiply them (the rule is a bit complicated, but it's easier than the rule for division of numbers XD), take their determinant (it's a number associated with each square matrix), and such.
(if you want we can go to the math thread and I show you examples, better to keep on-topic here)

Interesting drawing.
Someone once told me that when something goes into a black hole whatever is left comes out of a white hole (it was probably just a theory). That is what I see in that drawing (were the black hole becomes a white hole).
